Who doesn’t love a recipe from mum? This week we bring you Pam’s Pumpkin & Corn Soup – made by Paul’s mum especially for our recipe posts!
This recipe is a winter favourite that Pam makes whenever there is an excess of pumpkin in the vegie patch.
Pam is an old school home cook, but is always willing to test her skills trying something new – and come winter it is all about cooking warming meals and soups.
Pam is an avid fan of Masterchef and the Food Network, and she has a cupboard filled with recipe books old and new – which makes Paul’s life easier when he’s looking for a recipe to bring us for the SAMESH cooking class presents series! We continue to present recipes & tips while our face-to-face cooking classes for PLHIV and older LGBTIQ+ folk are unable to proceed.
NOTE: If you are a vegetarian, you can swap vegie stock for the chicken stock. Spring Gully Worcestershire Sauce is vegetarian and does not contain anchovies.

SAMESH are stuck unable to their monthly cooking class for PLHIV and older LGBTIQ+ folk in person, so here is a new recipe from Paul for community members to try at home: patties made from roast vegetables.
Whether you have some leftover roast vegetables, or whether you roast some especially for this recipe, you will love this delicious and hearty way to get some more vegetables into your diet.
Paul says: “these are healthy, vegetarian-friendly, yummy, and only take minutes to prepare and cook!”
This week, in In lieu of SAMESH’s face to face cooking classes for PLHIV and older LGBTIQ+ folk, Paul has worked on a soup recipe for community members to try at home. What better in this weather than a warming and nourishing bean soup?!
Paul says: “This week’s recipe is a winter warmer with a healthy angle- it’s perfect for vegetarians too. It is a nourishing bean soup with a rich tomato flavour: and like all soups, you can change the ingredients to suit your tastes or what is in your pantry or fridge.”

SAMESH have still not been able tor resume their face to face cooking classes for PLHIV & older LGBTIQ+ folk, so Paul is continuing to develop recipes for you to try at home. This week he indulges the sweeter side with a tangy crumbly blueberry cake!
Paul says: “This blueberry cake is very easy to make, and is surprisingly light – and tasty too! You can use fresh or frozen berries, and you can use any kind of berry you choose (or a mix).
Depending on how sweet your tooth is, you can also cut the amount of sugar in the cake mix by half, as the crumb topping adds further sweet sugary goodness.
Serve it on its own with a cup of coffee or tea – or have as a dessert and top it with a warm custard and cream.”
In lieu of SAMESH’s face to face cooking classes for PLHIV and older LGBTIQ+ folk, Paul has been developing and trying new recipes again to share with you.
Chicken Pasta Alfredo
This week’s savoury course features chicken (or your favourite vegetarian chicken alternative), as well as pasta – creamy comfort food for the cold days and nights that keep on coming. Paul says you may as well go the whole way and serve it with garlic bread!

For dessert, Paul has come up with a hummingbird cake with a twist! Something you might be proud to serve if you start to have a few (socially distanced) visitors – why not dig out the tablecloth and have an afternoon tea with a friend or two!
